Bocconcini is Italian for Mouthful. Being a traditional Italian stretch curd cheese, these various sized spherical shaped cheeses maintain their freshness suspended in water.
Semi-soft and elastically textured, this allows the cheese to exhibit its delicate flavour. It is this characteristic, together with the fact that fresh mozzarella melts to become wonderfully stretchy that makes this cheese so unique and popular. It is used to add texture to a dish rather than a specific taste. The juices, oils and flavours of other ingredients are absorbed and intensified bu the milkd, moist, open layers of spun curd.
Best served at room temperature.
