Tasting Notes: The honey produced is ochre yellow with a spicy, distinctive taste that is uniquely Tasmanian. This honey retains its flavour when used in cooking – it’s a perfect flavour for pannecotta, delicious accompanying a cheese platter, on hot buttered crumpets, or just by the spoonful!
Bees access the Leatherwood trees from apiaries on the west coast of Tasmania, deep in the World Heritage Area. Leatherwood honey is so distinctive it has been included in the International Ark of Taste (an international society that recognises rare, endangered and culturally significant foods).
Wellington Apiary began in 2009 in an established garden in the centre of Hobart by Antonia and Robin O’Brien.
